KS Kapālama Student Restaurateurs

Tweenage restaurateurs successfully opened a dining establishment as part of “The Restaurant,” a summer school class at KS Kapālama Middle School. The course, taught by KS middle school teachers Ray Parker and Mandy Chock, enabled students to create, promote and operate a restaurant.

Over the course of five weeks, middle school students learned the history and health benefits of food, how to prepare a meal, and about the business side of opening a restaurant. Their business plans included targeting an audience, doing a cost analysis, seeking a competitive advantage and utilizing marketing and advertising. 

The class culminated with the opening of “The Restaurant.” Customers used play money to buy smoothies, oatmeal raisin cookies, breakfast burritos, crepes, acai bowls, wraps, cupcakes, pancakes and more! KS photographer Michael Young was there to cover the culinary event.
