A very delicious recipe: Chicken lūʻau stew made in the Instant Pot
Greetings Kamehameha family! Each and every day, the Hawaiian language is heard in schools. However, it is important that language lives at home with your ʻohana too. Here is a recipe for some very delicious Hawaiian food: chicken lūʻau stew! Making this meal is easy and quick, and this recipe is great for dinner with your family. The mouth waters for chicken lūʻau!
If you don’t have an Instant Pot, you can also cook it in a regular pot on the stove or a slow cooker (crock pot); the cooking time will be longer. You can also make this recipe vegetarian using veggie broth and precooked ʻuala (sweet potato) or ʻulu (breadfruit) added at the end. Eat it with poi!
The original recipe is on the Kaʻiwakīloumoku website, and there are lots of delicious recipes there to choose from!
Ingredients:
Instructions:
Chop the onion and chicken thighs. To prepare the taro leaves: Wash the taro leaves with water. Break the stems off the leaf, peel the skin off the stems, and break the stems into pieces (two-finger width). Cut the leaves. Be aware, lūʻau can make skin itchy, so wear gloves if you want!
Put the butter into the Instant Pot and sear the chicken on “sauté.” Put the salt, onion, chicken broth, and lūʻau in the Instant Pot and cover. Cook on “Pressure Cook” on high for 35 minutes. Release the steam (can wait for natural release if you prefer) and mix with coconut milk. Four servings.
*If you cook this recipe in a regular pot, simmer for one hour on the stove. You can also cook it in a slow cooker on low for 6-8 hours. Add the coconut milk before eating.
